Christmas goodies.

The trees are up, the carols are on repeat … yep, Christmas is in full swing! In light of this, Linley (The Kitchen Fairy/Windswept & Interesting) shares some of her festive recipe treats! On a good day, we are the lucky samplers of these delights.

Santa Strawberries

1 lb large strawberries
1 container of cream cheese, softened
3-4 tablespoons icing sugar
1 teaspoon vanilla extract
Chocolate icing (or melted chocolate, edible pen)

1. Rinse strawberries and cut around the green.
2. Remove the top (enough for a hat). Clean out the whole strawberry with a paring knife. Prep all of the strawberries and set aside.
3. In a mixing bowl, beat cream cheese, icing sugar and vanilla until creamy.
4. Add cream cheese mix into a piping bag with the corner snipped off.
5. Fill the strawberries with cream cheese mixture.
6. Once strawberries are filled, top with the ‘hats’ and dot with chocolate icing. Decorate according to photo.

Note. If not serving immediately, pop them in the fridge.

White Chocolate Christmas treats

220 gram bar white chocolate
1 packet of Natural Confectionery company fruit forest soft jellies (I only use the red and purple ones)
70 gram pack of raw pistachios
35 grams of slivered almonds
3/4 cup of mini marshmallows
1 cup of coconut treads

1. Melt the white chocolate over a pot of water – making sure the water doesn’t touch the bowl, give it a stir to get the last bit melted.
2. While melting, chop the lollies into bits and give the pistachios a quick small chop (don’t go mad or they’ll go too crumbly).
3. Take the bowl off the hob and add all the ingredients.
4. Mix and teaspoon mixture into mini muffin papers. Set in the fridge.

Note. Measurements can change on what you have and what you want in the treats, could be cranberries, hazelnuts, anything naughty!
